the pros — and cons — of denuding a non-commercial-grade portafilter:




that would be jake’s solis crema sl 90, which, to my thinking, proves in the extreme the tenet of home junkies everywhere that the grinder comes before the machine in importance to the finished cup. jake uses a mazzer major, essentially pairing the heftiest chunk o’ burrs a pro is wont to use with a home machine of bare-minimum standards, as brew pressure and temp stability go — yet i’ve tasted some very respectable shots on that solis. unfortunately, the dremel job on that brass left little heft with which to seal off the portafilter top during brewing. result: geyser-ringed shottage. ah, well.
