I have been coming across this issue a lot lately. Why do people think that a small crescent of coffee people on the edge of a massive industry advocate that everyone else emulate the same narrow style and sensibilities? I guess there are those who come across as evangelicals with a propensity to coerce others into the bottleneck. There would be nothing special about itty-bitty drinks if everyone served them. There would be an extremely narrow spectrum if we are all forced to consume identical interpretations of the standards. I always advocate to my accounts to find that thing that they do well, figure out exactly what they like about it and how to prepare it to perfection, and push it to it’s limit. Then we will be able to get spectacular drinks of many varieties.

putting a name on a movement can make it quite a beast, simply through that act. definitions harden, styles become canonical, opinions calcify. it’s the nature of the beast. orwell, anyone?
i find it useful to consciously bust preconceived notions, from time to time. also, shannon’s remark was funny.
